CHOCOLATE-IRISH CREAM CHEESECAKE WITH WALNUT CRUST
SERVES 14 TO 16
Crust
1 1/2 cups digestive biscuit crumbs, such as McVitie’s brand
1/2 cup toasted walnuts, ground (see Note)
3 tablespoons sugar
6 tablespoons unsalted butter, melted
Filling
8 ounces semi-sweet chocolate, roughly chopped
Three 8-ounce packages cream cheese, at room temperature
1 cup sugar
1 teaspoon vanilla extract
3 large eggs
1/4 cup Irish cream liqueur
2 tablespoon confectioners’ sugar
2 tablespoons cocoa powder
Coffee beans, for garnish (optional)
Steps
Note: To toast walnuts, preheat oven to 375° F. Put walnuts on an ungreased baking sheet and toast, stirring occasionally, for 8 to 10 minutes, or until lightly browned. Remove from the oven and let cool.

I need glutten free options for these delicious recipes. I'm told that 1 in 200 of Irish have celiac disease and the best country in the world for glutten free options is Ireland. My recent visit to Listowel confirmed this opinion.
